A minute from Ningyocho Station, Genyadana Hamadaya has been serving kaiseki since 1912, on a site tied to Okamoto Genya, the Edo-era shogunate physician. Step into its rare sukiya-style building and the city noise fades into a calm courtyard and a garden that shifts with the seasons. Ingredients arrive fresh each morning from around Japan, but the signature starts with broth—kelp and fish simmered into a clear, deep backbone. In early summer, pike conger is wrapped in kudzu and shaped like a peony, finished with tart green plum and crisp lotus-root cake. With kimono-clad staff and private rooms overlooking greenery, it feels like a quiet, delicious time slip in central Tokyo.
